With all the warm weather here in Colorado and the arrival of spring, I thought it would be fun to celebrate with an amazing tropical treat. This smoothie is absolutely delicious AND really good for you. I found the recipe while browsing in a spice shop. The shop had little recipes all over the store which cleverly used all their spices. This one looked particularly interesting so I brought it home to try it. My kids even loved it which means it doesn't taste 'healthy'. It is really easy to make:
Start by adding ONE CUP COCONUT MILK to a high powered blender.
Next add ONE BANANA. It can be fresh or frozen. I used frozen to get a thicker milkshake consistency.
Add 1/2 CUP FROZEN PINEAPPLE.
1/2 CUP FROZEN MANGO.
1/2 TEASPOON OF GROUND GINGER.
1/2 TEASPOON GROUND TURMERIC.
1/2 TEASPOON OF CINNAMON.
A DASH OF PINK HIMALAYAN SALT.
I added a packet of stevia and I thought it was really sweet so you really do not need a lot. There is a lot of natural sugar from the fruit.
Lastly, add A TABLESPOON OF COCONUT OIL. Blend on high until well mixed.
Mine was nice and thick. You can see all the little speckles of cinnamon, turmeric and ginger.
Find a pretty glass to pour it into.
Find a great spot outside and enjoy a 'calgon moment' in your busy day.
I like to imagine I'm on a beach somewhere.
While you are daydreaming away your body is taking in all that goodness!
