My kids asked me to make them brownies in a mug. I said, "Well if I have to make 3 brownies in a mug I may as well just make brownies." And that is how I got myself roped into making brownies on a perfectly good Thursday evening. And if you are going to make brownies, they may as well be the best BEST brownies. Shall we?
Start by melting two sticks plus 2 tablespoons butter and two and 1/4 cups of sugar on a nice low heat. Stir occasionally to combine. Let the mixture cool slightly.
Beat 5 eggs in a bowl.
Now add the cooled butter/sugar concoction and mix well. Add 1/2 Tablespoon Vanilla and mix gently.
In a separate bowl, sift together 3/4 cup and 1 Tablespoon cocoa powder, 3/4 cup plus one Tablespoon flour and 1/4 Tablespoon salt.
Mix well.
Combine the wet mixture with the dry mixture. Mix until just combined (try not to overmix). Add 1/2 cup of chocolate chips (or chocolate chunks, in my case.) "Accidentally" add more for extra chocolate goodness.
Prepare a 9x 13 inch baking pan by lining it with parchment paper and non-stick cooking spray.
Pour the batter into the pan and bake in a pre-heated 350 degree oven for 35 minutes. Resist strong urge to "test" the batter by repeating the mantra "Raw Eggs, Salmonella" followed up by "It's only a little; what are the odds?"
Let them cool before cutting (yeah right! Who are we kidding here!).
Present in a beautiful manner with heart shaped fruit (Fruit makes it seem more healthy) and savor slowly (In your dreams......but in reality shove a humungous messy mouthful down your throat and follow up with a cold glass of milk!!!
